STEP 01

  • Rinse the Filter: Pour hot water through the filter to preheat the Chemex and remove any paper taste. Discard the rinse water.

Weigh and Grind the Coffee

  • Weigh the Coffee: Measure out 42 grams of coffee beans. This is approximately 6 tablespoons, but weighing is more accurate.
  • Grind the Coffee: Grind the coffee to a medium-coarse consistency, similar to kosher salt. This grind size is crucial for proper extraction.
STEP 03

Bloom the Coffee

  • Start the Timer: Begin a timer as you start this step.
  • Saturate the Grounds: Pour about 80-100 grams of hot water (just off the boil, around 200°F or 93°C) over the coffee grounds to saturate them evenly. Stir gently to ensure all grounds are wet. This step, known as blooming, allows the coffee to release trapped gases and enhances flavor.

Continue Pouring

  • At 45 Seconds: Begin pouring water in a slow, circular motion, starting from the center and moving outward. Avoid pouring directly on the filter.
  • Pouring Technique: Aim to pour steadily and evenly, maintaining a consistent water level. Focus on pouring over the darker spots to ensure even extraction.
STEP 05

Fill to the Desired Level

  • At 1:45 Minutes: Continue pouring until you reach a total of 700 grams of water. This should be done gradually, not all at once.
STEP 06

Allow it to Brew

  • Total Brew Time: The total brew time should be around 4 minutes. If the water drains too quickly or too slowly, adjust your grind size next time (finer if too fast, coarser if too slow).
STEP 07

Serve and Enjoy

  • Swirl the Chemex: Once brewing is complete, give the Chemex a gentle swirl to mix the coffee evenly.
  • Serve: Pour the coffee into your cup and enjoy. The Chemex typically yields about 2 cups of coffee with this recipe.
