In the heart of the South Park neighborhood, San Francisco, there has long been a daily buzz around the famed Caffe Centro. Throughout communities globally, the idea of “Centro”, (the center, middle of something) often provides the heartbeat of activity to our villages, towns, and cities. It is a common gathering place for meetings, conversation, relaxation, and culinary pleasures. This is the inspiration behind Fidalgo’s Organic Centro Blend. Named after the well-known coffee institution, this medium-dark, smooth coffee creates comfort and familiarity you can depend on daily.

The beans in Organic Centro are a “post roast,” meaning a blend of two separate batches with different profiles. The first part is Peru roasted dark. Then, a combination of Peru and Guatemala is added from a second lighter roast. Sourced at an altitude range of roughly 3600 – 5600 ft above sea level, the Piura, Amazonas, Cajamarca, and San Martin regions are situated in the Northern part of Peru. The crop is fully washed and dried in the sun. The beans are certified fair trade, organic, and known for caramel, chocolate, and walnut notes.

The smaller portion of Guatemala beans used in the lighter roast component also have the same certifications and undergo the wash/dry method. They are sourced from the Santa Cruz Barillas within the department of Huehuetenango, a region situated around 4600 feet above sea level. These beans can show flavors of banana bread, baking spice, nougat, and dark chocolate.

Together, they create a coffee described as mellow with a medium body, mild acidity, and a sweet finish. Some other notes to look for include roasted nuts, white chocolate, and citrus flavors that can taste winey or buttery. As mentioned, the acidity is mild but present, creating balance for an ideal “everyday” cup or enjoy with simple pairings like fresh bagels, biscotti, and buttered biscuits.

This is a coffee you could feature as a “house brew” for your busy café or restaurant – focused and consistent. Centro’s character embraces the coastal climate zones and an element of sophistication. Try it with an orange-walnut scone, or perhaps combine it with your favorite milk steamed up for a classic café au lait. It’s a “go-to” blend that appeals to a seasoned coffee drinker calling for refills and time set aside to savor for a while.

An easy way to spice up your next cold brew batch is to add a few cinnamon sticks while your batch is brewing for a cinnamon-infused coffee taste in every sip. If cinnamon isn’t your first choice, then we invite you to make your best cup by pairing cold brew with your favorite sweetener, syrup, specialty flavor, or milk. There are so many fun, creative, and tasty ideas for coffee. The sky is the limit!

Toddy Cold Brew System Directions:

  1. Rinse filter. Insert the stopper and filter into the bottom of the brew container.
  2. Pour 1-cup water into the brew container and then pour the entire 16-oz contents of Fidalgo Cold brew blend into the brew container.
  3. Add water to half-fill the container. Let the coffee steep for 5 minutes.
  4. Fill to ½” from the top with water. Do not stir.
  5. Steep at room temperature for 8 hours.
  6. Drain by removing the stopper and dripping into the decanter.
  7. Enjoy!

Blending different types of coffee beans is like cracking open the world and discovering a vast array of options to create new and exciting flavors. Unlike other industries like wine production, coffee blending offers a more global palette to producers, free from baffling regulations and inherited laws. In the Fidalgo 9 Bar, we combine two unique growing regions to create a whole new flavor.

This 50/50 blend combines the sweet and subtle chocolate notes of Guatemala coffee with the winey, fruity, and bright acidity of fully-washed process Ethiopian coffee. These vibrant characteristics shine in a lighter roast, allowing you to focus on the “terroir” of the beans in your coffee experience. Blending coffee is an art, and the combination of these two very distinct origins is a wonderful example of that magic.

The Fidalgo 9 Bar is made up of 50% Ethiopia Yirgacheffe Adame Gorbota and 50% Guatemala Huehuetenango Adiestso, both fully washed, meaning the skin of the cherry is removed from the bean, and then thoroughly washed with water, removing any remaining pulp. Additionally, both coffees are certified organic, shade-grown, and fair trade.

Yirgacheffe is located in southern Ethiopia within the mountainous region of the Gedeo zone, ranging from 5500 to 6500 feet above sea level. Some of its unique flavors can include Meyer lemon, tangerine, blueberry, vanilla, and black tea. On the other hand, Huehuetenango is located on the border with Mexico at an elevation of over 11,800 feet, making it the highest coffee-growing region of Guatemala. Known as the “Place of the Ancients,” its flavor notes resemble chocolate, plum, caramel, almond, maple syrup, subtle spice, “woodsy,” and floral notes.

Fidalgo’s 9 Bar received a 92-point rating from The Coffee Review and quickly became a staple in Fidalgo’s featured specialty labels. Combining the Ethiopia coffee profile, with its wild berry notes and tangy citrus, with the Guatemala beans produces a complex, flavorful, and aromatic experience.

After cupping several batches of 9 Bar over time, some unique descriptors consistently show up: an unexpected scent of watermelon right after the grind and dark fruit flavors like blueberry, plum, and dried figs. Other notes include dark baker’s chocolate, toast, and red wine. The color is light, but the flavors are abundant. This is a great coffee for the taster who appreciates all the nuances and uniqueness these two regions bring together. Pair it with a lemon poppyseed scone, a slice of key lime pie, or a homemade PBJ!

The annual Skagit Valley Tulip Festival is the largest in Washington state. It’s the second largest tulip festival in the US by acreage of tulips, number of farms, and days of blooms. 

There isn’t one location you go to for the festival. The fields are centrally located in the valley between La Conner and Mt. Vernon. Four primary farms create the color brilliance:
